Are you an Angel or Devil’s Food?
With Halloween approaching (my fav holiday:)), I wondered why is Devil’s food called Devil’s Food… oh and Angel’s food or Angel Food (I’ve seen both). Devil’s Food most likely comes from our American ties to German’s rich baking history. Rich chocolate (heavy, some say) cakes are a staple in Germany and the thinking is that Devil’s food is so named for its abundant use of Chocolate and even spices that we
re added. Angel food cake has its roots in French and Italian baking where egg whites were used to leaven a cake. References to Devil’s Food started sometime before 1900 with recipes in several cookbooks. And the earliest recipe for Angel food is in 1839 in Lettice Bryan’s The Kentucky Housewife.
