Got Zucchini? Probably if you have a garden :)
If you have a garden you probably have a lot of zucchini. I’m a fan of the bread, but i really love zucchini patties. My mom and grandmas used to make them. So easy... I shred about 2 cups of the zucchini (you can also use yellow squash), add 2 eggs and about 1/4 cup of flour, salt and pepper. Fry them in olive oil and salt them like potato chips. Oh and I also make a mayo, hot sauce and lemon juice remoulade to dip them in.
The word zucchini means ‘little zucca or pumpkin’ – ironically the ancestor of zucchini comes from the Americas, but really took off when it arrived in Italy.
